Ceviche is a marinated dish, what fishermen used to make while they are fishing. They caught the fish cleaned the fish, sliced it in pieces without any bones and marinated it with vinegar, salt, onions and sometimes some pepper or cilantro...the vinegar does cooks the fish which makes the fish not raw at all....this is great way to eat a meal.
