Peggy’s Salmon Arugula Salad with Pesto

Ingredients, all organic:
● 1 Salmon Fillet
● 1 Cup of Arugula
● 1 Tablespoon of Soy Sauce
● 2 Tablespoons of Coconut Oil
● 1 Tablespoon of Garlic
● 1 Tablespoon of Olive Oil
● 1 Hard boiled Egg
● 2 Tablespoons of Grated Parmesan Cheese
● 1 Pre cooked Potato
● 1 Tablespoon of Sour Cream
● 1 Tablespoon of Pesto
Nutritional Fact: Did you know that arugula is a good source of vitamins A and K, and that it could boost your immune system?
Tools:
● 1 Pan, Spatula, tong, silicone spoon, and kitchen scissors
Directions:
Place the salmon in a pan over a high flame and add 2 tablespoons of coconut oil, 1 tablespoon of soy sauce and 1 tablespoon of garlic. Cook for 3 minutes on each side.
Prepare the salad. Take a bed of arugula and add 1 tablespoon of olive oil on top. Slice a hard boiled egg and a pre cooked potato over the lettuce, and add 2 tablespoons of grated Parmesan cheese and 1 tablespoon of pesto. Also top each potato slice with some sour cream.
Add the salmon and dress with the sauce from the pan and you’re good to go!
