Peggy’s Tomato Salmon Salad, with Nuts and Olives

Ingredients, all organic:
● 1 Salmon Fillet
● 1 Cup of Romaine Mixed with Carrots & Red Cabbage
● 2 Tablespoons of Coconut Oil
● 2 Tablespoons of Sweet Chili Sauce
● 1 Tablespoon of Mixed Nuts
● 1 Tablespoon of Olives
● 1 Teaspoon of Cilantro
Dressing:
● 2 Tablespoons of Mayonnaise
● 4 Tablespoons of Sweet Chili Sauce
Nutritional Fact: Did you know that nuts could be beneficial to your bones?
Tools:
● 1 Pan, Spatula, tong, silicone spoon, and kitchen scissors
Directions:
1. Place the salmon in a pan over a medium flame. Add 2 tablespoons of coconut oil and 2 tablespoons of sweet chili sauce.
2. Cook the fillet for about 1 minute and 30 seconds each side.(because this one is a thin slice)
3. Meanwhile, make the salad dressing by mixing together 2 tablespoons of mayonnaise with 4 tablespoons of sweet chili sauce.
4. Now serve on a plate. Add the salad dressing over a bed of Romaine lettuce and top it off with 1 tablespoon of mixed nuts and 1 tablespoon of olives. Add the salmon on top, add 1 teaspoon of cilantro and you’re good to go!
