Peggy’s Chili Salmon Salad

Ingredients, all organic:
● 1 Salmon Fillet
● 2 Cups of Lettuce Mélange
● 2 Tablespoons of Mixed Nuts
● 1 Cup of Chopped Bell Peppers
● 2 Tablespoons of Coconut Oil
● 1 Tablespoon of Parmesan
● 2 Tablespoons of Chili Sauce
● 2 Teaspoons of Fish Seasoning
● 2 Tablespoons of Balsamic Vinegar
● 3 Tablespoons of Olive Oil
● 1 Tablespoon of Garlic

● 1 Salad Bowl

Directions:
1. Place the salmon in a pan on a medium flame and add 2 tablespoons of coconut oil.
2. Add 1 teaspoon of fish seasoning on both sides of the salmon.
3. Turn off the burner and let the salmon simmer for 3 minutes on each side.
4. Meanwhile, make the dressing with 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 1 tablespoon of garlic and 2 tablespoons of sweet chili sauce and mix it all together in a salad bowl.
5. To serve, take a plate of lettuce mélange, add the dressing and place the salmon on top. Add some more dressing and top it all off with 2 tablespoons of mixed nuts and 1 tablespoon of Parmesan cheese.
