Peggy’s Brown Rice with Shrimp and Bak Choy

Ingredients, all organic:
● 4 Large Shrimps
● 1 Cup of Bak Choy
● 1 Cup of Brown Rice
● 5 Tablespoons of Sweet Chili Sauce
● 1 Tablespoon of Ginger
● 1 Tablespoon of Garlic
● 2 Teaspoons of Cilantro
● 2 Tablespoons of Coconut Oil
● 1 Cup of Water

● 1 Pan
● Spoon
● Grater
Directions:
1. Place the shrimps in a pan over a medium flame. Add 2 tablespoons of coconut oil, 1 tablespoon of garlic, 2 teaspoons of cilantro, 1 cup of Bak Choy, 5 tablespoons of sweet chili sauce and 1 cup of water. Stir it all together.
2. Cook for 5-6 minutes. Just before done, grate in 1 tablespoon of ginger.
3. Serve by placing 1 cup of brown rice in the middle of the plate and put the shrimp on top of the rice and pour over the sauce from the pan.
