Peggy’s Salmon with Endives in a Mayonnaise Dressing

Ingredients, all organic:
● 1 Salmon Fillet
● 1 Endive
● 1 Cup of Iceberg Lettuce
● 2 Tablespoons of Coconut Oil
● 3 Tablespoons of Sweet Chili Sauce
● 1 Teaspoon of Cilantro
● 1 Tablespoon of Garlic
● 1 Hard boiled Egg
Dressing:
● 2 Tablespoons of Mayonnaise
● 1 Tablespoon of Olive Oil
● 3 Tablespoons of Sweet Chili Sauce
● 1 Teaspoon of Cilantro
Nutritional Fact: Did you know that endives are a good source of vitamins A and C and could help reduce cholesterol?
Tools:
● 1 Pan, Spatula, tong, silicone spoon, and kitchen scissors
Directions:
Place the salmon in a pan over a high flame and add 2 tablespoons of coconut oil, 3 tablespoons of sweet chili sauce, 1 teaspoon of cilantro and 1 tablespoon of garlic.
Cook for 3 minutes on both sides.
Prepare the salad dressing. Mix together 2 tablespoons of mayonnaise, 1 tablespoon of olive oil, 3 tablespoons of sweet chili sauce and 1 teaspoon of cilantro.
Serve on a plate. Slice a hard-boiled egg over a bed of iceberg lettuce with endive leaves around the center, add the salmon and top with the mayonnaise dressing.
