Peggy’s Pesto on Tenderloin & Broccoli

Ingredients, all organic:
● 1 Tenderloin
● 1 Cup of Broccoli
● 1 Cup of Pesto
● 1 Cup of Salad Mix (Lettuce, Carrots & Red Cabbage)
● 2 Tablespoons of Coconut Oil
● ½ Tablespoon of Garlic
● 1 Tablespoon of Olive Oil
● 1 Tablespoon of Balsamic Vinegar
● 1 Tablespoon of Grated Parmesan Cheese
Nutritional Fact: Did you know that broccoli is a good source of vitamin C and could be very beneficial for your skin?
Tools:
● 1 Pan, Spatula, tong, silicone spoon, and kitchen scissors
Directions:
Place the tenderloin in a pan over a high flame. Add 2 tablespoons of coconut oil, 1 cup of broccoli, 1 cup of pesto and ½ tablespoon of garlic.
Cook for about 5 minutes.
Prepare the salad. Sprinkle 1 tablespoon of olive oil and 1 tablespoon of Balsamic vinegar over a salad mix.
Serve on a plate. Add the beef from the pan, place the broccoli on the side, dress with sauce from the pan and top it all off with 1 tablespoon of grated Parmesan cheese.
