Peggy’s Poached Salmon Salad with Pears & Beets

Ingredients, all organic:
● 2 Salmon Fillets
● 1 Cup of Romaine Mixed with Carrots & Red Cabbage
● 1 Cup of Veggie Broth
● 1 Hard boiled Egg
● 1 Cup of Pear Slices
● 1 Cup of pre cooked Red Beets
Dressing:
● 2 Tablespoons of Mayonnaise
● 4 Tablespoons of Curry Ketchup
● 1 Teaspoon of Hoisin Sauce
● 1 Tablespoon of Chopped Red Onion

Tools:
● 1 Pan, Spatula, tong, silicone spoon, and kitchen scissors
Directions:
1. Poach the salmon fillet in 1 cup of veggie broth for about 3-4 minutes.
2. Make the salad dressing by mixing together 2 tablespoons of mayonnaise, 4 tablespoons of curry ketchup, 1 teaspoon of hoisin sauce and 1 tablespoon of chopped red onion.
3. Once the fish is ready, take it out of the pan and mash it into the salad dressing you just made.
4. Now serve the mixture on a plate. Take a bed of Romaine lettuce and dress it up with about 1 cup of pear slices, the pre cooked red beets and a hard-boiled egg sliced in 2 or 4. Add the salmon-dressing mixture on top and you’re good to go!
