Peggy’s Plantain with Spinach and Mushrooms (Vegan Dish)

Ingredients, all organic:
● 6 pre cooked Plantain Slices (equals ½ a plantain)
● 1 Cup of Spinach
● 1 Cup of Mushrooms
● 2 Tablespoons of Tapenade
● 2 Tablespoons of Coconut Oil
● 1 Tablespoon of Garlic
● 1 Teaspoon of Madame Jeanette
● 1 Teaspoon of Celery
● 2 Tablespoons of Soy Sauce
● 1 Teaspoon of Cilantro
● 1 Tablespoon of Mixed Nuts
Nutritional Fact: Did you know that plantain contains plenty of potassium?
Tools:
● 1 Pan, Spatula, tong, silicone spoon, and kitchen scissors
Directions:
1. Place a pan over a medium flame and begin adding the ingredients. First add 2 tablespoons of coconut oil. Follow up with 1 cup of chopped spinach and 1 cup of sliced mushrooms. Mix these together. Do not add the pre cooked plantain slices yet.
2. Now add 1 tablespoon of garlic, 1 teaspoon of Madame Jeanette, 1 teaspoon of celery, 1 teaspoon of cilantro, 2 tablespoons of tapenade made from crushed black olives and 2 tablespoons of soy sauce. Stir well.
3. Now add 1 cup of pre cooked plantain slices and cook a little longer, ensuring these don’t become too soft.
4. When finished, serve on a plate and enjoy your meal!
