Peggy’s Sausages in Mustard with Mashed Potatoes and Sauerkraut

Ingredients, all organic:
● 2 Chicken Sausages
● 1 Cup of Sauerkraut
● 3 Potatoes
● 3 Bay Leaves
● 3 Tablespoons of Dijon Mustard
● 1 Cup of Chicken Broth
● 1 Cup of Red Onions
● 2 Cinnamon Sticks

● 2 Pots
● Spoon
Directions:
1. Add 1 cup of sauerkraut to a pot of boiling water and leave to cook for 3-4 minutes.
2. Add 3 potatoes to a separate pot of boiling water.
3. When the potatoes are soft, mash together and mix in the sauerkraut.
4. Slice 2 chicken sausages lengthways and add to a pan with 1 cup of chicken broth over a medium flame. Add 1 cup of red onion rings, 3 tablespoons of Dijon mustard and 3 bay leaves. Stir it all together.
5. Cook for 3 minutes until the sauce thickens and add a cinnamon stick.
6. Serve by placing the sauerkraut in the middle of a plate; add sausage on top with a cinnamon stick and the rest of the sausage on the side. Pour the sauce from the pan on top and you’re good to go!
