Ingredients, all organic:
● 1 Cup of Smoked Golden Corvina (if unavailable, use smoked halibut)
● 2 Cups of Iceberg Lettuce
● 1 Cup of Tomato
● 1 Orange
● 2 Tablespoons of Orange Zest
● ½ Teaspoon of Cumin
● 1 Tablespoon of Ginger
● 2 Tablespoons of Olive Oil
● 1 Tablespoon of Balsamic Vinegar
● 1 Tablespoon of Garlic
● ½ Teaspoon of Dijon Mustard

Directions:
1. Place the orange in the microwave for 10 seconds to make it easier to squeeze.
2. Make the salad dressing by putting 2 tablespoons of orange zest into a salad bowl and add 1 tablespoon of ginger, ½ teaspoon of mustard, 2 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, 1 tablespoon of garlic and ½ teaspoon of cumin seeds. Stir it all together.
3. Serve on a bed of iceberg lettuce and drizzle the dressing over it. Place slices of smoked golden Corvina (or smoked halibut) on top and you’re good to go!
