Peggy’s Sweet Potato Gratin with Tuna

Ingredients, all organic:
● 1 Tuna Steak
● 2 Tablespoons of Coconut Oil
● 1 Tablespoon of Soy Sauce
● 1 Tablespoon of Ginger
● 1 Tablespoon of Garlic
● 1 Teaspoon of Olive Oil
Gratin:
● 1 Cup of pre cooked Sweet Potato
● ½ Cup of pre cooked Carrots
● 1 Teaspoon of Garlic
● 5 Teaspoons of Sour Cream
● ½ Cup of Grated Parmesan Cheese

Tools:
● 1 Pan, Spatula, tong, silicone spoon, and kitchen scissors
● Microwave
Directions:
Prepare the gratin. Add 1 cup of pre cooked sweet potato slices in a bowl, along with ½ cup of carrots, 1 teaspoon of garlic and 5 teaspoons of sour cream. Mix well. Then cover with ½ cup of grated Parmesan cheese. Place in microwave for 1 minute and 30 seconds.
Meanwhile, prepare the tuna. Place the tuna steak in a pan over a high flame and add 2 tablespoons of coconut oil, 1 tablespoon of soy sauce, 1 tablespoon of ginger, 1 tablespoon of garlic and 1 teaspoon of olive oil.
Cook for 4 minutes on each side.
Serve on a plate. Place a piece of gratin on the plate, add the tuna on top, dress with the pan sauce and you’re good to go!
