Ingredients, all organic:
● 1 Cup of Arugula
● 1 Cup of Lychee
● ½ Cup of Cherry Tomatoes
● ½ Cup of Avocado Slices
● 1 Tablespoon of Grated Parmesan Cheese
● 1 Egg
Dressing:
● 2 Tablespoons of Olive Oil
● 1 Tablespoon of Garlic
● 1 Tablespoon of Ginger
Nutritional Fact: Did you know that arugula, also commonly known as rucola, is full of vitamins A, E and K?
Tools:
● 1 Pan
Directions:
1. Make the salad dressing. Mix together 2 tablespoons of olive oil, 1 tablespoon of garlic and 1 tablespoon of ginger.
2. Prepare the salad. Add 1 cup of lychee over a bed of arugula, also add ½ cup of cherry tomatoes and ½ cup of avocado slices.
3. Add the salad dressing over the salad, top it all off with 1 tablespoon of grated Parmesan cheese and you’re good to go!
