Peggy’s Shrimp Salad with Plantain & Pear

Ingredients, all organic:
● 4 Large Shrimps
● 1 Plantain
● 1 Cup of Romaine Lettuce
● 1 Cup of Pear Slices
● 1 Cup of Olives
● 2 Tablespoons of Teriyaki Sauce
● 2 Tablespoons of Olive Oil
● 2 Tablespoons of Balsamic Vinegar
● 2 Tablespoons of Coconut Oil
● 1 Tablespoons of Garlic
Nutritional Fact: Did you know that shrimps contain anti-aging properties, and that olives could help lower blood pressure?

● Spoon
Directions:
1. Place the shrimps in a pan over a medium flame and add 2 tablespoons of coconut oil. Then add 1 tablespoon of garlic and 2 tablespoons of Teriyaki sauce and stir.
2. Cook the shrimp for 3-4 minutes.
3. Meanwhile, work on the salad dressing. Mix together 2 tablespoons of olive oil, 2 tablespoons of Balsamic vinegar and 1 tablespoon of garlic.
4. When finished, add the dressing over a bed of Romaine lettuce.
5. Add 1 cup of (black) olives over the Romaine.
6. Now add the plantain slices on the side of the Romaine along with 1 cup of pear slices. Add the shrimp on top and you’re good to to!
