Peggy’s Shrimp Sweet Potato Salad

Ingredients, all organic:
● 4 Shrimps
● 1 Cup of Lettuce Mélange
● 1 Cup of Carrots
● 1 Cup of Cherry Tomatoes
● 1 Hard boiled Egg
● 1 Cup of Grated Parmesan Cheese
● 1 Teaspoon of Ginger
● 1 Pre-cooked Sweet Potato
● 1 Teaspoon of Wasabi
● 1 Tablespoon of Soy Sauce
● 1 Teaspoon of Garlic
Nutritional Fact: Did you know that sweet potato could help relieve symptoms of bronchitis and asthma?
Tools:
● 1 Pan, Spatula, tong, silicone spoon, and kitchen scissors
● Grater
Directions:
Place the shrimp in a pan over a medium flame. Add 2 tablespoons of coconut oil, 1 teaspoon of wasabi, 1 tablespoon of soy sauce, ½ teaspoon of ginger and 1 teaspoon of garlic.
Cook for 4-5 minutes.
Serve on a plate. Slice the pre-cooked sweet potato over a bed of lettuce mélange; add the cherry tomatoes and a hard boiled egg on top. Top with 1 cup of grated Parmesan cheese, add the shrimp and top it all off with sauce from the pan.
