Peggy’s Sweet Chili Salmon Salad

Ingredients, all organic:
● 1 Salmon Fillet
● 1 Cup of Iceberg Lettuce
● 1 Hard boiled Egg
● 1 Pre cooked Sweet Potato
● 4 Tablespoons of Sweet Chili Sauce
● 1 Teaspoon of Ginger
● 1 Teaspoon of Cilantro
● 1 Tablespoon of Garlic
● 1 Teaspoon of Mint
● 1 Tablespoon of Olive Oil
Nutritional Fact: Did you know that mint could help relieve congestion?
Tools:
● 1 Pan, Spatula, tong, silicone spoon, and kitchen scissors
● Grater
Directions:
Poach the salmon in a pan with ½ cup of water over a high flame. Add 4 tablespoons of sweet chili sauce, 1 teaspoon of ginger, 1 teaspoon of cilantro, 1 tablespoon of garlic and 1 teaspoon of mint leaves.
Cook the salmon for 3 minutes on both sides.
Meanwhile, prepare the salad. Place 1 tablespoon of olive oil over a bed of Romaine lettuce and slice 1 pre-cooked sweet potato and 1 hard-boiled egg on top.
Add the salmon, dress with the sauce from the pan and you’re good to go!
