Peggy’s Shrimp Salad with Red Beets

Ingredients, all organic:
● 4 Large Shrimps
● 1 Hard boiled Egg
● 1 Cup of Romaine Lettuce
● 1 Cup of pre cooked Red Beets
● 1 Teaspoon of Cilantro
● 2 Tablespoons of Sweet Chili Sauce
● ½ Cup of Shaved Parmesan Cheese
Dressing:
● 2 Tablespoons of Olive Oil
● 2 Tablespoons of Balsamic Vinegar
● 2 Tablespoons of Dijon Mustard
● 1 Tablespoon of Garlic
Nutritional Fact: Did you know that red beets contain plenty of vitamin C and could help maintain healthy eyesight?
Tools:
● 1 Pan, Spatula, tong, silicone spoon, and kitchen scissors
● Spoon
Directions:
1. Add the shrimp in a pan over a medium flame. Add 2 tablespoons of sweet chili sauce and 1 tablespoon of cilantro and mix together.
2. Cook the shrimp for 3-4 minutes, add 2 tablespoons of water if needed.
3. Now create the salad dressing. Mix together 2 tablespoons of olive oil, 2 tablespoons of Balsamic vinegar, 2 tablespoons of Dijon mustard and 1 tablespoon of garlic.
4. When the shrimp is done, serve on a plate. Take 2 sliced pre cooked red beets and place over a bed of Romaine lettuce. Take 1 hard-boiled egg and also slice over the Romaine, before adding ½ cup of shaved Parmesan cheese and the salad dressing on top. Top it off with the shrimp and you’re’ good to go!
