Peggy’s Shrimp & Tenderloin Surf ‘n Turf with Pesto

Ingredients, all organic:
● 1 Tenderloin
● 3 Shrimp
● 1 Cup of Romaine Lettuce
● 1 Cup of Shaved Parmesan Cheese
● 2 Tablespoons of Coconut Oil
● 1 Tablespoon of Pesto
● ½ Cup of Cherry Tomatoes
Nutritional Fact: Did you know that pesto contains basil which has excellent anti-inflammatory properties?

Directions:
1. Place the steak and shrimp in a pan over a medium flame. Add 2 tablespoons of coconut oil and 1 tablespoon of pesto.
2. Cook for about 4-5 minutes.
3. Meanwhile, prepare the salad. Top a bed of Romaine lettuce with about 1 cup of shaved Parmesan cheese, ½ cup of sliced cherry tomatoes and about 1 cup of pesto.
4. Serve on a plate with the chopped tenderloin cubes and shrimp. Top it all off with a little extra shaved Parmesan cheese and you’re good to go!
