Peggy’s Tenderloin with Blue Cheese and Beets

Ingredients, all organic:
● 1 Tenderloin
● 2 Cups of Butter Lettuce
● 2 Tablespoons of Blue Cheese
● 1 Cup of Red Beets
● 1 Tablespoon of Butter
● 2 Teaspoons of Steak Seasoning
● 1 Tablespoon of Olive Oil
● 1 Tablespoon of Balsamic Vinegar
Nutritional Fact: Did you know that beets are a great source of vitamin C and A?

● 1 Pan
● Spatula
Directions:
1. Place the tenderloin, sliced into medallions, in a pan over a high flame. Add 1 tablespoon of butter and add 1 teaspoon of steak seasoning on both sides of the beef.
2. Cook for 2 minutes on each side.
3. Let the meat rest before serving for the best texture.
4. Serve on a plate. Place the beef over a bed of butter lettuce. Sprinkle 1 tablespoon of olive oil on top. Dress with 1 cup of red beets on the sides and add 2 tablespoons of blue cheese on top.
