Peggy’s Red Beet Blue Cheese Salad

Ingredients, all organic:
● 2 Red Beets
● 2 Sliced Eggs
● 1 Tablespoon of Blue Cheese
● 2 Tablespoons of Sour Cream
● 2 Tablespoons of Olive Oil
Nutritional Fact: Did you know red beets are full of vitamin C and fiber?

● Salad Bowl

Directions:
1. Cook the red beets in a pot with boiling water.
2. Meanwhile start with the dressing. Add 2 tablespoons of olive oil, 2 tablespoons of sour cream and 1 tablespoon of blue cheese into a salad bowl. Mix it all together until smooth & creamy.
3. Serve on a plate. Place 1 cup of butter lettuce in the middle and add the beets. Place boiled egg slices around the middle and top with the dressing and tomato slices.
