Peggy’s Quinoa Pasta with Salmon & Blue Cheese

Ingredients, all organic:
● 1 Salmon Fillet
● 1 Cup of Quinoa Pasta
● 2 Tablespoons of Sour Cream
● 1 Tablespoon of Coconut Oil
● 1 Tablespoon of Blue Cheese
● 1 Cup of Mushrooms
● 1 Tablespoon of Garlic
● 1 Teaspoon of Ginger
● 1 Teaspoon of Soy Sauce
● 1 Teaspoon of Basil
Nutritional Fact: Did you know that mushrooms could help lower cholesterol and are also a good source of iron?
Tools:
● 1 Pan, Spatula, tong, silicone spoon, and kitchen scissors
● 1 Pot
● Grater
Directions:
Cook the quinoa pasta in a pot for about 6 minutes.
Meanwhile, cook the salmon fillet in a pan over a medium flame. Add 1 tablespoon of coconut oil, 1 tablespoon of blue cheese, 2 tablespoons of sour cream, 1 cup of mushroom slices, 1 tablespoon of garlic, 1 teaspoon of ginger, 1 teaspoon of soy sauce and 1 teaspoon of basil.
If the sauce in the pan dries out, add 2 tablespoons of water from the pot with pasta to poach the fish with.
Cook the salmon for about 4 minutes. Drain the pasta add in the sauce of the salmon and mix and cook for 30 more sec
Serve on a plate.
