Peggy’s Pesto on Tenderloin and Endives

Ingredients, all organic:
● 1 Tenderloin
● 1 Cup of Endives
● 1 Cup of Plantain
● 2 Tablespoons of Pesto
● 1 Teaspoon of Rosemary
● 1 Tablespoon of Garlic
● 1 Tablespoon of Grated Parmesan
Nutritional Fact: Did you know that plantain contains plenty of potassium and that endives contain plenty of vitamin C?
Tools:
● 1 Pan
Directions:
1. Place the steak in a pan over a high flame and add 2 tablespoons of pesto.
2. Cook for 3-5 minutes.
3. Add 1 teaspoon of rosemary, 1 tablespoon of garlic and cook.
4. Serve on a plate. Arrange about 1 cup of endive leaves on a plate with 1 cup of plantain slices in between. Add some pesto over each endive leaf.
5. Sprinkle 1 tablespoon of grated Parmesan over the endives, add the steak on top and you’re good to go!
