Peggy’s Tenderloin & Sweet Potato Salad

Ingredients, all organic:
● 1 Diced Tenderloin
● 1 Cup of Arugula
● 1 Cup of pre cooked Sweet Potato Slices
● 2 Tablespoons of Coconut Oil
● 1 Tablespoon of Garlic
● 4 Tablespoons of Marinade
● 2 Tablespoons of Olive Oil
● 2 Tablespoons of Shaved Parmesan Cheese
● 1 Tablespoon of Pesto
● ½ Cup of Tomato Slices
Nutritional Fact: Did you know that sweet potatoes could help boost your immune system and give relief from symptoms of asthma and bronchitis?
Tools:
● 1 Pan, spatula, tong, kitchen scissor, silicone spoon
Directions:
Add the tenderloin in a pan over a high flame. Add 2 tablespoons of coconut oil, 1 tablespoon of garlic and 4 tablespoons of marinade.
Cook for 3-5 minutes.
Meanwhile, prepare the salad. Add 2 tablespoons of olive oil over a bed of arugula, 2 tablespoons of shaved Parmesan cheese, dots of pesto on top and about ½ cup of tomato slices.
Serve the meat on top and you’re good to go!
