Peggy’s Spinach Salad with Tuna

Ingredients, all organic:
• 1 Tuna Steak
• 1 Cup of Spinach
• 5 Cherry Tomatoes
• Half a pre cooked Plantain in thin Slices
• 1 Cup of Mushrooms
• 1 Egg
• 1 Teaspoon of Galangal
• 2 Tablespoons of Marinade
• 2 Tablespoons of Coconut Oil
• 1 Cup of Avocado
• 1 Tablespoon of Garlic
• 1 Teaspoon of Madame Jeanette

Tools:
● Pan, Spatula, tong, silicone spoon, and kitchen scissors
Directions:
1. Place the tuna in a pan over a medium flame, add 2 tablespoons of coconut oil, 2 tablespoons of marinade, 1 cup of mushrooms, 1 tablespoon of garlic, 1 teaspoon of galangal, 1 teaspoon of Madame Jeanette and stir it all together.
2. Cook for 4-5 minutes.
3. In the meanwhile prepare the salad. Take a bed of spinach, add ½ plantain slices around the center, and then add 1 cup of cherry tomatoes, 1 egg sliced in half and 1 cup of avocado.
4. When finished, add the contents from the pan, dress with the pan sauce and you’re good to go!
