Peggy’s Artichoke Chicken Salad

Ingredients, all organic:
● 1 Cup of Romaine
● ½ Cup of Artichokes
● 1 Chicken Breast
● 2 Tablespoons of Coconut Oil
● 4 Tablespoons of Sishado Marinade
● 1 Tablespoon of Ginger
● 2 Tablespoons of Olive Oil
● 1 Tablespoon of Balsamic Vinegar
Nutritional Fact: Did you know that artichokes contain the highest amount of antioxidants of all vegetables?
Tools:
● 1 Pan
● Spoon
● Grater
Directions:
1. Place the chicken in a pan over a medium flame. Add 2 tablespoons of coconut oil, 4 tablespoons of Sishado marinade and grate in 1 tablespoon of ginger. Stir it and leave to cook until the chicken is well done.
2. Serve on a plate. Place the chicken over a bed of Romaine lettuce. Dress with 2 tablespoons of olive oil and 1 tablespoon of balsamic vinegar. Add ½ cup of artichokes on top and you’re good to go!
