Peggy’s Salmon Salad with Lychees

Ingredients, all organic:
● 1 Salmon Fillet
● 1 Cup of Romaine Lettuce
● 4 Tablespoons of Sweet Chili Sauce
● 1 Tablespoon of Cilantro
● 1 Tablespoon of Chia Seeds
● 1 Cup of Lychees
● 1 Tablespoon of Garlic
● 2 Cinnamon Sticks
● 1 Tablespoon of Red Onion
● 1 Tablespoon of Five Spices Powder
● 1 Cup of Water
Nutritional Fact: Did you know that lychees are excellent for your digestive system, and are said to have antiviral properties?
Tools:
● 1 Pan
Directions:
1. Place the salmon fillet in a pan over a medium flame. Add 4 tablespoons of sweet chili sauce, 1 cup of water, 1 tablespoon of cilantro, 1 tablespoon of garlic and 1 tablespoon of chopped red onion. Stir it all together.
2. Now add about 1 cup of lychees and cook the salmon for 3 minutes on each side.
3. Add 2 cinnamon sticks to the pan and stir.
4. When finished, serve on a plate. First top off the bed of Romaine lettuce with about 1 tablespoon of chia seeds before adding the salmon on the plate.
5. Now dress the side of the salad with the lychees from the pan, sprinkle the sauce from the pan over the salad and top it all off with a dash of cilantro.
