Peggy’s Teriyaki Tenderloin on Arugula

Ingredients, all organic:
● 1 Tenderloin
● 1 Cup of Arugula
● 2 Tablespoons of Coconut Oil
● 1 Tablespoon of Garlic
● 2 Teaspoons of Rosemary
● 2 Teaspoons of Cilantro
● 3 Tablespoons of Teriyaki Sauce
● 2 Tablespoons of Olive Oil
● 1 Tablespoon of Balsamic Vinegar
● 2 Tablespoon of Grated Parmesan
Nutritional Fact: Did you know that arugula contains plenty of antioxidants and that it is also a good source of vitamins A and K?
Tools:
● 1 Pan
Directions:
1. Place the tenderloin in a pan over a medium flame and add 2 tablespoons of coconut oil. Also add 1 tablespoon of garlic, 2 teaspoons of rosemary, 2 teaspoons of cilantro and 3 tablespoons of rosemary.
2. Cook the steak for 4-5 minutes for a medium-rare steak.
3. Meanwhile, prepare the salad. Add 2 tablespoons of olive oil, 1 tablespoon of Balsamic vinegar and 1 tablespoon of grated Parmesan cheese on top.
4. When done, leave the tenderloin to rest in the pan for about 1 minute for the best texture.
5. Serve on a plate. Sprinkle 1 tablespoon of grated Parmesan cheese on top and you’re good to go!
